WHO WE ARE

The Distillery Paolazzi Vittorio was founded in 1962 in Faver in Cembra Valley to continue the family tradition of "lambicar",

today carried on by the son Martino.

After the First World War, the distillation of pomace had become illegal and performed in Cembra clandestinely: it was a risky operation that allowed, however, the survival of a very hard and poor peasant economy.

It's for this reason that the dialect term "lambicar" takes on the double meaning that is "Art to produce grappa (distilled)"

and "lead a life of hardship and toils in poor rural reality."

The paternal great-grandfather Giuseppe was the owner of an alembic before the annexation of Trentino to Italy, when the production of grappa for domestic use was permitted.

Later, his grandson Vittorio, having completed his studies at the Agricultural Institute of San Michele, decided to make noble the distillation activity, creating a small family distillery.

In order to respect the tradition of Trentino and Cembra Valley, he chose the discontinuous steam distillation method.

Today, after fifty-three years, the small distillery has grown and with a lot of experience, takes care of all details necessary to obtain quality products, while maintaining the typical and traditional taste.
